Prepare the sourdough starter: Mix the sourdough starter with rye flour and water. Cover with plastic wrap and leave in a warm place for 12-16 hours. 2. Make the malt mixture: Combine rye malt and ground coriander, then pour boiling water over it. Mix well and let it sit for 1 hour. 3. Prepare the dough: • In a large bowl, combine rye flour, wheat flour, salt, sugar, and dry yeast. • Add the malt mixture, sourdough starter, honey, and warm water. Mix until a thick dough forms. • Cover and let the dough rise in a warm place for 2 hours. 4.
