When some weight is applied to the load cell the resistance of the strain gauge varies slightly which in turn makes a voltage change in the voltage divider bridge, this variation is measured by the HX711 and turned into a 24bit value. There is no need and no point knowing the absolute resistance variance, which anyway will vary slightly for each unit, in fact you only need the ADC value, and at least two calibration points, the zero (no load) and the value at a known calibration load (for example 100G or 1KG) you then make a simple linear interpolation to determine the weight relative to the ADC output value.
