After all, our initial mission, in 1986, was inspired by the espresso of Italian coffees: how to recreate this drink at home. At Novecento, we try to recreate the Italian coffee of the 40's: a dark and smoky coffee, which takes you back to the atmosphere of old Italian bars. At that time, roasting machines, such as pizza ovens, operated on wood. The roasting process was necessarily slower and the coffees used in blends were dictated by what was most readily available: namely Robustas from West Africa and Arabicas from East Africa and, of course, from Brazil. The first blends had an exotic touch with coffee from Yemen, the first Arabica coffee in history to be marketed. The ingredients and roasting styles were designed to create a coffee that is low in acid, but full body and with a dense, dark, long-lasting crema with a slight bitterness. Was this the prevailing Italian flavor because this was how coffee beans were combined and roasted at the time? Has this technique thus formed a favorite flavor?
