Description: Oxalis tuberosa (Oca) tubers, freshly dug up, and organically grown in the Pacific Northwest. *Medium = Quarter Size (approximately 1") or larger *Small = Less than Quarter Size (less than 1") Only a small one is necessary to grow a plant, but the larger ones will have more 'eyes' to sprout plants from- similar to growing potatoes or other tubers in this way. In their native South America, at high elevations, they grow with a consistent day length and temperature- so here in the Northern latitudes they grow a little differently. In the Pacific Northwest, I plant them in spring with other vegetables, but the Oca plants really shine when everything else is dying back in September and October (as the day length shortens). For me, they bloom in October, and will grow until a frost kills the plants. I dig them up a few weeks later, usually around December. I keep the tubers in a cold but not freezing location, out of the light, until spring. I'll also advise that the plants look stressed when the temps are above 90 degrees, so if you're in a place with hot summers I'd recommend partial shade- at least during the hot part of the summer. I'll munch on them raw, when they are freshly dug up, but we've also roasted them with butter, oil, salt garlic- typical preparation like other root vegetables- and they are delicious that way.
