Directions: For 20 LBS: Combine 18 lbs meat 2 lb beef fat, grind through a 3/16" grinder plate, or use 20 lbs ground meat, add seasoning cure packet & 1-2 cups ice water---for a richer product add 1/2 cup flavor 86 or 1 cup nonfat dry milk, knead well. Stuff into 22-26 mm collagen or sheep casings, tie/twist into 8-10" links. Refrigerate overnight to cure. Next day hang in smokehouse or oven & smoke/cook in usual manner until internal temp reaches 160 degrees F. Remove hang at room temp until cool to the touch.
